The Best of Peep Week: Lemon Peep Pie

Over the years, I have made and/or sampled many dishes using peeps. There have been chocolate covered Peep Pops and Molten Lava Peep Cakes and Peep Brûlée. I also hosted a peep potluck at work one year where I was able to taste Peep Tater Tot Hot Dish. That's a once in a lifetime opportunity. Thankfully. But the best thing I ever made was the simple Lemon Peep Pie. It was absolutely delicious and something I would make again without hesitation.
